Super Simple Oaty Cookies

Super quick, simple and nutritious recipe coming your way right NOW!:

Pour some boiling water over 2-3 chopped dates and leave to soak for a couple of minutes. Chop up two large ripe bananas and stick them in the microwave for 30 seconds to soften them up a little more. Mash them up and mix in a teaspoon of cinnamon, the dates (drain the water off), any other dried fruit you like – I used about 1/3 cup each of dried apricots and raisins – and about 1.5 cups oats. Mix it all up, place spoonfuls on a non-stick baking sheet and stick in the oven on a medium heat for about 15-20 mins, until firm and golden. Once they’re out, I highly recommend slathering them in nut butter…

There you go! These cookies are really nutritious so don’t worry if you eat the whole lot like I did. Next time you’re craving cookies, give these a go for a quick fix!
